
Celebrate with something delectably different this New Years Eve! Rosemary and Lavender aren’t usuaully the go-to flavours for festive cocktails, but trust me, this merry little concotion is so refreshing, sparky and delicious, it will be the showstopper at any party. It’s simple to prep, and the key ingredient is already bottled and ready to go. The rosemary syrup will need to be made in advance, but don’t be put off by this part. It’s quick and easy and a large batch can be store in the fridge for a month.

Recipe
Ingredients
- 50ml of Lavender Gin
- 1tbsp Rosemary syrup
- Rosemary sprigs to garnish
- Edible glitter
- 150ml of Clementine Tonic Water
For the Rosemary Syrup
- Combine 100g of sugar, 125ml of water and 4 sprigs of rosemary into a saucepan
- On a medium heat, bring to the boil and cook until all the sugar has dissolved
- Remove from the heat and leave to infuse for an hour
- Strain the syrup to remove the excess rosemary and decant into a sterilised bottle and store in the fridge once cooled
For the Cocktail
- Pour the rosemary syrup and lavender gin into a cocktail shaker and give it a shake for 30 seconds
- Strain the mixture into a glass and top with the tonic water
- Add ice, sprinkle with edible glitter and garnish with a rosemary sprig
